Recipe: Mushroom Quinoa Risotto

I just love finding healthy versions of classic (usually pretty unhealthy) meals and who wouldn’t want a healthy mushroom risotto? This is my own recipe that I threw together last night and it’s a winner! It is so easy, it’s ridiculous…

Ingredients

1 onion

2 cloves of garlic

A little olive oil for frying

1 large punnet of mixed, chopped mushrooms

1,5 cups quinoa

About 4 cups of vegetable stock

1/2 green chilli

Handful of baby spinach

  1. Fry 1 onion and 2 cloves of garlic in olive oil
  2. Add a large punnet of mixed mushrooms and some mixed herbs of your choice. Cook it all up and set aside for later.
  3. Cook about 1.5 cups of quinoa as per package instructions, but use vegetable stock instead of water
  4. Add the mushroom mixture to the quinoa
  5. Add some chopped fresh green chilli
  6. Throw in a handful of baby spinach leaves to wilt
  7. Serve with grated Parmesan (or nutritional yeast for a vegan version)

Serves about 6

  • Our little monster’s last day of play school today for the year! He’s been a champion part-timer for a few months now and he’ll be going to a new school and every day next year! I did not expect the emotions to hit me so hard on this one - thankfully I was wearing my sunglasses to mask the tears as all the teachers cuddled him and said how much they’ll miss him. Yoh, this parenting gig is a wild ride, guys 😭
Time now to start the first of many school holidays 💕What on earth am I going to do with him to keep him occupied every day, all day with his little sister’s feeding schedule and my pumping schedule?! Challenge accepted.

  • I’m defined by motherhood right now, and that’s totally okay.
I’m feeling quite far removed from the ‘real world’ and I think that’s just normal with a newborn and a toddler in tow 🤨
I’ve been equally enjoying the time I’ve been able to take ‘off’ as maternity leave and stressing a lot about getting things back to ‘normal’ again.
My business took a knock while I was having a baby and the stress of getting it back to where it was has tainted this experience quite a bit (related: if you know of any corporates needing digital marketing/social media work, let me know!).
Nonetheless, I feel that the dreaded postpartum days have been kinder to me this time around and I’m emerging relatively unscathed 🤣

  • I saw a quote like this recently and it stuck with me. If motherhood teaches you anything it’s to roll with the punches, forget what happened yesterday or an hour ago or 5 minutes ago and just move on because there’s no time to dwell 🙏🏻

I’m so excited to move on forward into the rest of our lives as a mad family of 4 🙌
The first few months of a new baby are rough, whether it’s the first or not, whether the baby sleeps well or not, whether there are feeding issues or not. If you’re in the trenches of those first few months right now, just know that it DOES get better and you have the rest of your lives to reap the rewards of your hard work.
